Chimol- Central American Fresh Salsa

As the weather gets colder and the evenings get shorter, I can always count on this delicious fresh salsa to bring some heat and colour. This recipe is one that I grew up having, and it never looked quite the same, sometimes there were bell peppers, other time there were carrots, so feel free to make this your own.

This is also very easily one of the most versatile salsas out there. We have it at home a lot and can literally be put on so many things… in a taco salad, on some rice, in a burrito bowl, over some chicken, or on a sandwich! The possibilities are endless! The best part: it’s also quick, easy and you only need 5 ingredients!

Take, the tomatoes, onion, jalapeno, and cilantro, chop them up (arranging them ever so beautifully optional) and move to a medium sized bowl.

Juice your two limes and add to your bowl. Finish off with a pinch of salt and pepper to taste and stir it all together! To let all of those flavours soak into each other, cover your bowl up with cling wrap and let sit in the fridge for at least a half an hour, the longer the better! Instructions
  1. Take the tomatoes, onion, jalapeno, and cilantro, chop and then move into a medium sized bowl.
  2. Juice two limes, and add to your bowl.
  3. Add salt and pepper to taste.
  4. Stir together and cover with cling wrap. Let sit for a minimum of half an hour to let the flavours marry together.
