The Chopped Leaf is definitely my go to if I need a quick lunch or dinner that will keep me feeling awesome (as much as french fries and pizza are great, let’s be honest, you need a good nap to get that down). My usual go-tos are the Whole Bowl No. 1 (because avocados!) and the Spicy Chicken sandwich, because really that ranch sauce for dipping is bombbbb.
I now have, a new menu item to add to my favorites (although it’s only around until October 30th), that I would love to share with you! I was so stoked to make acquaintance with the brand new “Beet Bowl”, so I went in for lunch this week to try it!
I decided to try it in a whole bowl because on a cold day that warm brown basmati is a win, and added some chicken for a protein boost. I have to be honest, this isn’t normally a menu item I would have traditionally chosen, but ever since giving beets another chance this past spring, I have been on a beet kick (golden beets are great too)!
This lovely bowl is topped with lots of greens, blueberries, walnuts, feta, and a really great honey dijon which is where the magic really happens! The honey dijon is the perfect accompaniment to the earthiness of the fresh beets, and definitely makes for an #unbeetabowl, and the perfect fall lunch: so make way everything pumpkin spice! 😉
